How to convert oven recipes to a slow cooker
Slow cookers cook with gentle, moist heat over many hours, so the standard conversion is: low heat, long time. As a rule of thumb, a recipe that bakes in the oven at 350°F for an hour becomes 6–8 hours on Low or 3–4 hours on High in a slow cooker.
| Oven time | Slow cooker LOW | Slow cooker HIGH |
|---|---|---|
| 15–30 minutes | 4–6 hours | 1½–2½ hours |
| 30 min – 1½ hours | 6–8 hours | 3–4 hours |
| 2–3 hours | 8–10 hours | 4–6 hours |
Which foods convert well?
Braises, stews, roasts, chili, soups and pulled meats are ideal — moist-heat cooking makes tough cuts tender. Avoid converting recipes that depend on crispness (fried chicken, roasted vegetables meant to caramelize), delicate baked goods, or dairy-heavy sauces that can curdle over long cooking.
Liquid and safety rules
- Slow cookers trap steam — reduce liquid by about a third unless the recipe is a soup or stew.
- Add dairy, herbs and fresh greens in the last 30 minutes.
- Always bring meat to a safe internal temperature: 165°F (74°C) for poultry, 145°F (63°C) for whole cuts of beef/pork, 160°F (71°C) for ground meat.
- Don't lift the lid — each peek adds ~20 minutes of cooking time.
